Craving Phyllo for Dinner

This is a very simple dish made with three ingredients: 
  1. Risotto
  2. Butternut Squash
  3. Phyllo Pastry
Cook the risotto in broth and with the butternut squash until the rice becomes thick and creamy finish with a swish of olive oil before taking it off the stove for wrapping it up in phyllo. 

For this recipe, work with a ratio of 1 part rice, 2 part butternut squash, and 1/2 pack of phyllo pastry; this will yield 4-servings as shown in the picture without clunky phyllo dough. If your goal is finish one pack of phyllo cook 2 portions of rice, 4 portions of butternut squash for your filling. 

Variations:
  • To make this dish vegetarian, add 1 tablespoon of butter, a handful of parmesan cheese, when you season with Kosher salt and fresh ground pepper. 
  • To make this dish Vegan, splash with cashew milk and season with Kosher salt and fresh ground pepper. 
  • To make this dish carnivore friendly, add chunks of cod fillet to the rice 2-3 minutes before taking it off the heat. 
Place the cooked rice into the phyllo and wrap it up into individual portions. To a greased pan, add the phyllo and rice pockets. Bake in a 375 oven until the phyllo is crisp and flaky.  Depending on your grease tolerance or desired flakiness, adding olive oil or butter between layers of phyllo will help the sheets of delicate pastry to separate while baking. If you're into glazed phyllo, an egg wash or milk wash would give the phyllo a little sheen.

Serve piping hot with a side salad for a satisfying dinner.
